White Beans with Meat is a very traditional and common dish in Turkey, especially when it is served with pilaf and pickles. Turkish people just love this dish.

2 cups white/butter beans
½ lb beef/lamb meat, chopped
2 onions, chopped
2 tbsp oil
1 tbsp tomato paste
1 dried red pepper/green pepper, chopped
½ tsp baking soda (optional)
¼ tsp chili red pepper flakes (optional)
1 tbsp salt to taste
1 cup hot water

4000 Years of Raw Meatball History
Adıyaman; also known as the 'Kingdom of Comegene' is one of the most interesting places in the world. The height of Mount Nemrut located here is 2134 meters. When you climb to the top of the mountain, there are giant sculptures that greet the sunrise and sunset separately. Studies show that the sculptures on the top of the mountain are arranged in a certain order according to the lunar calendar. King Antiochus comes to mind when it comes to the Kingdom of Komegene, and raw meatballs come to mind when it comes to Adıyaman. But do you know the story of this irresistible flavor that goes back 4,000 years?

In Southeastern Anatolia, the homeland of raw meatballs, the legendary story of this magnificent taste is told as follows:

King Nemrut, the king of an ancient civilization in Adıyaman region, Hz. He decides to burn Abraham because he believes in one god. With the order he gave to his people, he gathered all the trees and wood pieces in the kingdom in a large square. Houses ran out of wood for cooking and prohibited fires. Hz. The trees and pieces of wood gathered in the square to burn Abraham are the only fire to be burned. The people gathered the wood pieces for days on the orders of the king. A hunter, unaware of this order because he hunts on the mountain, brings the deer he hunted to his house and asks his wife to cook. The spouse tells about the king's prohibition of lighting. The hunter also obeys the desperate order. The hunter separates the right hind leg of the deer and crushes it with a fine stone. Add bulgur, pepper and salt and knead them thoroughly with the mashed meat. It is rumored that the raw meatball was made by this hunter and his family for the first time. Hz. The raw meatballs, which emerged about 4 thousand years ago when Ibrahim was thrown into the fire, come to this day as a type of food.

Raw meatballs; Bulgur is a food that is prepared by mixing minced meat, tomato paste, onion, parsley and various spices, consumed without heat treatment (cooked), and is a gift of southeast cuisine to the world.

Apart from Adıyaman, raw meatballs are also made in provinces such as Şanlıurfa, Adana, Gaziantep, Diyarbakır, Malatya, Elazığ and Mardin. It is usually served in the form of thin and long (squeezing) meatball pieces and with lettuce leaves, and in some regions it is consumed with lavash bread.

Also known as an example of musical-chatted entertainment culture in Southeastern Anatolia, the homeland of raw meatballs, "Çiğköfte" is made as a meal in the "row night" entertainments, in other words, "Çiğköfte" is the constant meal of the row nights.
